A new-found love

Spaghetti Squash dish with chicken and cherry tomatoes

I have been home for about 3 weeks now and it’s been nice.

Am I already planning my next trip? MAYBE. But let’s not talk about it now.

While I love travelling, it’s always good to be back home.

I have established my routine again, am back to the gym, kept up with my workout and running habits, back hiking and, the best part, back to my own kitchen and able to try new recipes.

I have been playing around with high-protein sauces, using greek yogurt and cottage cheese blended with different things, like garlic, herbs, and my new favourite: Valentina hot sauce.

Not having social media makes getting new ideas for recipes a tad bit more difficult, but I have two main sources that I use a lot. One is the good “old” blog All Day I dream about food. She has the most amazing recipes, and they are lowcarb, high-protein, sugar-free, all the good things.

The other one is an YouTuber I have been following recently who, on top of being hilarious, shares really good easy and protein-packed recipes that I have been enjoying.

There are very few people in the webz that I follow and that have the capacity to influence my decisions when it comes to buying something.

And it’s never products. It’s usually food hahahahahah

So I bought for the first time in my life spaghetti squash because of a recipe this YouTuber shared and I AM SOLD.

The most difficult part is cutting this baby while it’s raw. But once you get over this arduous task, all you need to do is season it with olive oil, salt, pepper then throw it in the oven (200 C – don’t know, don’t use F) with the open side down, for about 25 minutes.

Then you get to do this:

Which will result in this gorgeous and delicious, HOWEVER, healthy spaghetti-like thing:

I topped it with a delicious chicken I made yesterday (yes, I’m not humble when it comes to cooking. I know what I’m doing), some cherry tomatoes and the creamy sauce I made mixing Greek Yogurt, salt, garlic and Valentina Sauce*

The result was something I would eat for a whole month (maybe adding more veggies, which I didn’t because I was in a hurry):

Healthy life can be delicious.

Another really good thing I tried last weekend was a sugar-free, low-carb pistachio homemade ice cream.

Girl, it was GOO-DE!

* It says extra hot. It’s NOT. If you are into hot sauces, it’s delicious but FAR AWAY from being extra hot. But trust me, it’s delicious.
